Pasta with Sun-dried Tomatoes

The original recipe is from Barefoot Contessa Family Style. All I can say is if you don't already own a Barefoot Contessa cookbook- then go get one. Now. I seriously love everything I have ever made from her.
Here's my version of her amazing pasta salad. (on the salad ingredients except for the pasta, I estimate- so just do whatever looks like enough)

1 pound spiral pasta (I used whole wheat rotini)
salt
olive oil
1 pound tomatoes, medium-diced
1/4 cup kalamata olives
1 pound fresh mozzarella, medium-diced
6 sun-dried tomatoes in oil, drained and chopped

Dressing:
10 sun-dried tomatoes in oil, drained
4 tablespoons red wine vinegar
12 tablespoons olive oil
2 garlic cloves, minced
2 teaspoons capers, drained
1 tablespoon salt
1/2 teaspoon black pepper

1 cup freshly grated parmesan cheese
1 cup packed basil leaves, julienned (or just chopped up)

Cook pasta in large pot of boiling salted water with a splash of oliv oil to keep it from sticking together. Drain will and allow to cool. Place pasta in bowl with tomatoes, olives, mozzarella, and sun-dried tomaotes.

For the dressing, combine the sun-dried tomatoes, vinegar, garlic, capers, salt, petter in food processor until almost smooth, then add olive oil while it's running to mix well.
Pour the dressing over the pasta (I really only use 3/4 of it), then sprinkle parmesan cheese and basil and toss well.

This made enough for all three of us!
