
So I had to try this because we went to Claim Jumper last week and I ordered it and have been wanting more ever since! It's not exact, and I made a few things up to suit what I had, but I love how it turned out!
Richie just grilled the chicken and seasoned it with some chicken seasoning we had. Also, you could probably make less dressing- I still have a ton of it left!
salad:
use any combined amount to of the following to suit your taste
romaine/iceberg lettuce
mandarin oranges
white raisins
avocado- sliced
craisins
blue cheese
green onions- chopped
candied pecans (or plain)
grilled chicken cut into bite sized pieces

dressing:
1.5c canola oil
1c apple cider vinegar
1/4c honey
3T sugar
a couple pinches dehydrated onion
1 tsp dried thyme(or less to taste)
1 clove garlic- minced
1 tsp kosher salt
1 tsp black pepper
1/8 tsp onion powder

Combine ingredients in a jar and shake until well blended. Refrigerate to let flavors mix. If you want, you can marinate the chicken in some of the dressing.

Ooh, it is the Claim Jumper salad! I made Matt imitate it for Mother's Day last year. He told me I could choose any salad. He even sugared the pecans himself. I'm definitely making this as it gets warmer out.
