I found this recipe in the Feb. '10 Better Homes & Gardens and thought it would be fun to try. I found all of the ingredients at Trader Joes- the Naan is my fav! Now I wish I had taken a picture of these because I thought they turned out so colorful and yummy looking.
2 cups cooked, diced potatoes- like fingerlings (I think this should be optional)
1 Tbsp. olive oil
4 flat bread (naan) or pita rounds
olive oil
4 oz. crumbled feta cheese with garlic and herb
2 cups prepackaged spinach
12 oz. thinly sliced deli roast beef
kalamata olives (I added these)
cherry or grape tomatoes- halved
Preheat oven to 475. Place naan on cookie sheet. Brush with olive oil, sprinkle with feta. Bake for about 5 minutes- until cheese starts to melt. Take out of oven and top with everything else. Return to oven until cheese is melty and edges are toasted.
YUM.

These were divine! I ate every last bit of feta on the plate.
I'm all for going public.. I just didn't want any one offended that we were making dinners for eachother :) I need to add some new recipes.. I've found some good ones recently! YUM!
If you ever want to make these again... yum yum. I'm craving them right now!
